From Grandma’s Country Kitchen — Crusty (Soft Center) Spoon Bread

CRUSTY (SOFT CENTER) SPOON BREAD

Combine, then sift:

3/4 cup yellow cornmeal

1/4 cup bread flour

1 tablespoon sugar

3/4 teaspoon salt

1 teaspoon baking powder

Stir in:

1 beaten egg

1 cup milk

Beat the batter until it is well blended. Melt 2 tablespoons in an 8×8″ baking dish.

Pour the batter in pan. Place it in a 375 degree oven. Pour 1/2 cup milk over the top.

Bake the bread for 45 minutes or more. (Until good and crusty.)
